We bring in Fresh Whole Scottish Salmon every month. Our Gourmets Choice Salmon come from fresh, fast-flowing waters and are fed on a natural diet that reflects their choice in the wild, resulting in a better texture and taste. We work with quality suppliers, whom are monitored by the RSPCA and who hold Freedom Foods accreditation for care of their salmon where no artificial chemicals or preservatives are used in any way.

We also bring in Fresh Cod, Hake and Monkfish, then freeze them within 2 days of arriving in Singapore.

    Imported Frozen Scottish Langoustine Tails (500g per tray)

    Langoustine is a small lobster and is also known as Norway lobster and the tails are sometimes called scampi. They are a good source of protein, with a wide range of vitamins and minerals such as calcium, phosphorus and iron.

    A rare delicacy. The 2 reasons why they are so hard to come by are:

    • It is hard work catching them, done in a similar way to harvesting lobsters;
    • Their numbers suffered a rapid decline at the turn of the millennium. There are now very strict guidelines and quotas for catching them

    Once caught, langoustines are very difficult to keep alive, so most of them will be quick-frozen while the boats are still at sea.

    How to prepare:

    • Defrost at room temperature for 2-3 hours. For best result, defost for 12 hours in a refridgerator in covered container.
    • Using a sharp knife or kitchen scissors, split down the back and remove the vein.
    • Boil, grill, pan fry, BBQ, stir fry or add to fish stews.

    Scottish Arbroath Smokies (2pc Pack)

    The fishwives originally smoked the fish in halved barrels with fires underneath, trapping the smoke under layers of hessian sacking. At the start of the 20th century the first Auchmithie fisher-folk began moving to Arbroath, and the process soon became known as the Arbroath Smokie, as we know it today.

    Only haddock can be used to produce an authentic ‘Arbroath Smokie.’ The fish are gutted at sea, washed and boxed ready for auction at the fish market. Once back in the fish house, they are headed and cleaned, or ‘sounded.’ They are then dry salted in tubs for a given period. This helps to draw excess moisture from the fish and toughens the skin in preparation for the smoking process. The length of salting time depends on the size of the fish and how fresh they are (amongst other factors). After salting, they are thoroughly washed off, then tied by the tail in ‘pairs’ and hung on sticks.

    Awarded European Union’s Protected Geographical Indication in 2004 has elevated Arbroath Smokies to a luxury product. Along with Parma Ham and Champagne, it is now in the premier league of food. This protected status means that only fish smoked within a 5 mile radius of Arbroath can be called Arbroath Smokies.
